Mint Chocolate Chip Brownies

This is the first addition of Bread, Brownies, and Beyond! Welcome! I hope to make often appearences across your computer screen, and that you enjoy this fantastic mint brownie recipe that I baked today.

Mint Chocolate Chip Brownies:

Prep: 15 min
Cook: 30 min
Cool: 15 min
Ready In: 60 min

Oven: 350 F Pan: 13x9x2


2 sticks butter

2 cups sugar

4 eggs

1 tsp vanilla

a quick splash of peppermint extract (about one to two teaspoons, more or less depending on how minty you like it)

3/4 cup cocoa

1 cup white flour

1/2 tsp baking powder

1/4 tsp salt

1/2 bag Andes Mints

1/2 cup semisweet chocolate chips


Grease baking pan. In a microwave safe bowl, melt butter. Whip together melted butter, sugar, eggs, vanilla, and peppermint extract. Add cocoa. Add flour, baking powder, and salt until fully combined. Stir in chocolate chips, and Andes mints. Pour batter into prepared pan, and bake for 30-35 minutes, or until a tooth pick comes out clean. Cool for 15-30 minutes. If desired, use a cookie cutter to cut the brownies into cute shapes.
