I have been wanting to bake these cookies for a while, they looked so delicious! I was a little wary at first, I haven't always had complete success with gluten free recipes, especially those which contain no flour substitute. However, both the sugar and peanut butter managed to hold them together causing them to be chewy, and slightly caramelly.
What's better than a gooey chocolate chip cookie on a cool cloudy day? Not really anything... pudding possibly, but only if it's chocolate.
Flourless Peanut Butter Chocolate Chip Cookies:

Cook: 12 min
Ready In: About 22 min
Oven: 350 degrees F.
Yield: About 18 cookies
1 cup white sugar
1 cup peanut butter
1 teaspoon vanilla
1/2 teaspoon baking soda
1 cup chocolate chips
Preheat oven to 350 degrees F, and grease a large baking sheet.
Beat together peanut butter and eggs. Slowly add sugar, beating until well combined. Stir in vanilla. Mix in baking soda, and then slowly add chocolate chips.
Spoon batter onto prepared baking sheet, and bake for about 12 minutes until golden. Remove from oven, and allow to cool for about five minutes. Remove cookies from baking sheet immediately after 5 minutes, other wise they will stick. Enjoy!
