Healthy Gluten-Free Chocolate Chip Pancakes

In my opinion, pancakes are one of the greatest foods, ever. Whoever invented them, was a complete genius, with my highest respect. However, pancakes can be a very tedious to make, as well as unhealthy in large quantities (isn't everything??). Not these!! (Unless you fill them with tons and tons of chocolate chips.) These have all the goodness of normal pancakes, minus all the unhealthy ingredients.

These beauties took only about 10 minutes to make, and basically tasted like chocolate chip banana bread. However, they can be a little tricky to fry, since they don't have gluten, which is what holds regular pancakes together. If they're not competely cooked, it will taste more like a bowl of banana oatmeal than a pancake.

Gluten Free Chocolate Chip Pancakes:

Yield: 1-2 servings

Time: 10 min
Prep: 5 min
Cook: 5 min


1 medium banana

1 egg

1/4 cup milk

1/4 cup gluten-free rolled oats

2 tablespoons dark chocolate chips


In a blender, combine all ingredients, leaving out the chocolate chips. Blend until smooth.

Heat a large frying pan over medium heat, and grease with cooking spray. Spoon batter onto pan, and sprinkle with dark chocolate chips. Cook both sides, until brown. Makes about 6 mini pancakes, or 2 large pancakes.
